As I mentioned yesterday, it’s sandwich week [for me]! I made this delicious sandwich using hi-protein tofu, which comes already pressed and baked in all sorts of delicious flavors. This one was the Sriracha kind and it was SO SO SO GOOD. Recipe below!

For the sauce: mix together 2 tbsp gochujang, 1 tbsp fruit vinegar (I used plum), 1 tbsp sweetener (I used brown rice syrup, but you can use maple, agave, etc.).

For the sandwich, place the vegan cheese directly on a non-stick pan over medium high heat. Layer on thin slices of hi-protein tofu, sauce, then another layer of cheese. Let it cook for about 3 minutes, until the bottom layer starts to bubble. Flip the cheese-tofu-cheese “situation” over—mine came right off. Add your favorite greens (I used some cabbage and green onions), some hummus or pesto (the pesto turned out great!), maybe some more sauce (if you like your sandwiches saucy, lolol!), and then the bread. After you let the bottom layer of cheese cook for a bit, pull the whole sandwich off the pan using a spatula and slice your bottom slice of bread beneath it. It’s a little tricky and not exactly clean, but it worked! Dig in!
